Green smoothie
Have I ever mentioned we have a plethora of persimmons?
If you only knew how many this was and how little of a dent it made in the tree.
I hate to see them go to waste so we made some persimmon jam. We also both got blistering burns from it and now are no longer wanting to make any jam of that sort.
I made dried persimmons last year. And chutney.
But all of those things were a lot of work for not much gain. Besides gifting the persimmon jam, which I will be doing since persimmon jam is by no means our favorite and we don't need a dozen jars of it, we weren't putting that effort toward something that was worth our time.
Until we considered cubing and freezing them for our daily green smoothie.
We pretty much have a green smoothie every day, not typically a replacement meal, but as part of breakfast most often. I buy the frozen mango bags and power blend greens at Costco no matter where we are in our budget. Some people need coffee to wake up, I desire a green smoothie. Whatever works.
We were really hoping we would could do all persimmons instead of mangos (and get a break on the budget!), but it was way too sweet and just not quite as good. However, we've discovered about half and half (cause you know I don't measure!), persimmons and mangos and it is perfect. The sweetness of the persimmons really helps with the subpar mangos as of late, they were much riper in the summer. Also, they are not selling just the mango bags anymore, but the peach, strawberry, mango combo which is good too.
My green smoothie blend:
(I know there are recipes galore out there)
2 cups water
1 banana
1-2 Tbls. fresh lemon juice
a thumbnail sized piece of fresh ginger
4 cups loosely packed greens, we use the power green tri blend of kale, chard, and spinach
1 cup frozen persimmon cubes**
1 heaping cup frozen mangos
**Of course, if you do not have a big fat persimmon tree in your backyard, feel free to use all mangos or the blend I mentioned above. When the mangos are not as ripe, it won't be as sweet, but the green smoothie is all about getting in more greens anyway! :)
I can breathe a sigh of relief, albeit congested, because we made it to Friday! We are so incredibly thankful that Mike gets all of next week off and so we are hoping we are healthy enough to go play. And hopefully I can bring some of our new adventures to the blog. Have a great weekend!
