Figs for days

  Our fig tree is nearing the end of the 2nd harvest.  There is one in early summer and one in late summer.  At the beginning of the summer I used these figs and made my first batch of fig jam.  It was delicious!



 It is simple too.  Boil and let simmer a bunch of sliced figs, lemon juice, and sugar.  I used this recipe.  I also added a cinnamon stick.




 Fast forward to a couple of weeks ago when I made fig newtons!  My friend sent me the recipe she uses here.  This recipe is pretty good, I like it mostly because the fig jam has little sugar.  The dough on the other hand has a lot, so there is no lack of sugar in these.

   You can see the meyer lemon zest in the dough, which I much prefer to the normal orange flavor in store bought fig newtons.

   The dough is not as malleable as I thought it would be and it was breaking as I folded it over the jam and I thought after I baked these the pan would be one big fig jam explosion.

   I guess the fig jam had set enough that it wasn't!  And I was very thankful!

I baked them a little longer than the recipe said, just to make sure the bottoms were lightly browned.

  I wish I could say that my family gobbled them up!  But I can't.  It isn't because they were not delicious, they were dangerously yummy.  Instead, I would say it is because they are spoiled in the baked good department because I used to make them SO often and they don't feel like it is a special treat (unless I make chocolate chip cookies) when I bake.  So, we brought them all to swim team and most of them were eaten there!
