Stuffed peppers

  I don't know about you, but I love peppers.  There are all kinds showing up at the farmer's markets now, I even saw a teeny bit of red on some bell peppers.  It's definitely been a warm enough summer to get red bell peppers.  I have picked up some gypsy peppers lately and grilled them.  That's pretty much what I do with most of my peppers.  I buy a ton during the summer, roast, peel, and freeze them and use them for all kinds of things...soups mostly, sandwiches, on top of pizza, and cook with black beans.  What do you do with peppers?

  I put a roasted pepper on a hamburger this week, but I also made stuffed peppers a couple of weeks ago.  They were delicious!!

Here is what I did:
6 gypsy peppers roasted, peeled, deseeded and opened up
1/2 red onion diced
1 jalapeno diced (I left most of the ribs and seeds and the spice was nice)
4 cloves garlic
~2 cups corn
15 oz. diced tomatoes (I probably wouldn't do tomatoes next time, or use fresh ones diced)
1 tsp. cumin
1/2 tsp. oregano
1/4-1/2 cup cilantro
salt and pepper
1/4 cup cream cheese
heaping 1/2 cup cheese grated (I use cheddar because that's what I have)

Saute onion, jalapeno and garlic til onion is soft.  Add corn, tomatoes, cilantro, and spices and sauté about 2-3 minutes.  Mix in cream cheese and some grated cheese, leaving enough grated cheese to sprinkle on top of peppers.  Stuff peppers with this mixture and sprinkle cheese on top.  Bake at 350 til cheese is melted and peppers are piping hot, about 10 minutes.  Garnish with extra cilantro if you have some.
