Greek burgers and guilt

  A few weeks back I had cooked a whole bunch of chickpeas with the intention of using some for dinner, some for hummus.  Mike wasn't feeling the whole chickpea thing and asked if I could make something else.  You know how hard it is to come up with a second dinner idea?!?!  Anyway, fortunately he married a creative-in-the-kitchen-when-she-has-to-be type.  For dinner I scrounged up some greek burgers.

  Into the hamburger, I mixed some mashed chickpeas (because one little package of that organic ground beef from Costco does not serve all 6 of us), green onions, garlic, cumin, tomato paste, a touch of cinnamon, salt and pepper.  Serve with naan as the bun, tzatziki, and cucumbers.  We do a very simple tzatziki--mix greek yogurt with some garlic, cumin and lemon juice.

  But now I'm feeling SUPER guilty for buying the ground beef.  Did you know that Cali is in a serious drought and certain proteins are by far the number 1 consumers of our water?  Read this.  They be trying to tell us to take shorter showers.  We are going to stay away from beef and almonds (and walnuts too) and call it good.  Rest assured, I will not be replacing those proteins with cricket flour.

Thank goodness we can still take showers.  At least this year.

    I made tzatziki the other day with intention of having gyros.... Forgot to buy pita bread. Doh. This looks more like something Randy would like.
