Baking bread

  Is it just me or do you crave carbs when you're tired too?  I am usually pretty good about the handfuls of chocolate chips during the day (not so much at night).  So, when I am craving it during the day, I know I am tired!  Usually, it's my fault.  Staying up too late finishing a project or reading, I am guilty as ever.  Today, I'm blaming it on that cute Ava girl.  She has started rolling over back to front and when she does it in the middle of the night, she can't get herself back to sleep unless I flip her back over.  Basically, I slept from 4:30-7:00 a.m. this morning with her on the couch.  Ghiradelli chocolate is being consumed while writing a blog about bread today, friends.  :)
 
  We had run out of normal ole sandwich bread and so it was time to try out some recipes I have been collecting.  Which reminds me, our Costco has stopped selling Dave's Killer Bread.  Is it only our Costco?  That made me so sad when I found out.  Anyway, first up was a whole wheat recipe by King Arthur Flour.  We mostly use King Arthur Flour because in my opinion it is the best (and it's the cheapest at Target!).  I need to try this recipe again because our loaf turned out super dense.

  Yes, I use the kitchenaid to "knead" dough.  Truly kneading dough is fun only when you have a lot of time and little to do.

"It touched my nose, Mama!" said Joel in the loudest non-yelling voice possible.
 
  The next day, we tried an Oatmeal Sandwich Bread.  Oatmeal makes bread really good!  I had high hopes for this bread. 
  Unfortunately, I forgot about it during the second rise.  Oops!  I punched it down and baked it anyway.

It looked okay after baking it.
 
  It was pretty yummy overall.  I know that if I would have followed the rise times more closely, the yeast wouldn't get out of control.  This would make the holes more even and the flavor won't be as affected.  I definitely will make this again if I happen to be out of bread!
