Chicken Noodle Soup with Broccolette


  My family devoured this super quick and easy soup on monday when 2/3 of us were sick.  Fortunately, Mama got a pass this round and was able to take care of everyone.  If you haven't tried out making your own chicken broth, what are you waiting for?  When you need to make soup in a pinch, homemade broth is what makes a boring soup amazing.  And with these ingredients always in my pantry, it is a perfect thing to whip up.

Chicken Noodle Soup with Broccolette
1 Tbls. olive oil
1 onion, diced
4-5 boneless skinless chicken thighs (I buy the organic pre-packaged 3 packs at Costco)
4 cloves garlic, diced
12-15 baby carrots, diced
2.5-3 quarts of chicken broth
salt and pepper to taste
~1/4 cup dried noodles
4 broccolette stems, roughly chopped

  Saute onion in olive oil for about 2 minutes.  Add in chicken thighs and let brown.  My chicken thighs were still in a frozen bundle when I added them because I didn't plan ahead.  Add in garlic and baby carrots and saute for about 1 minute.  Add in chicken broth and salt and pepper to taste.  This really depends on if you salted your own broth, buy salted broth, etc.  Let this simmer for about 20 minutes.  Add in noodles, and cook as long as the package directions say.  3 minutes or so before you serve, add in broccolette.

  Serve with bread and it's a meal!  I always have pretzel rolls from TJs in the freezer for these sort of dinners.  I also had some leftover homemade potato rolls in the freezer that were equally delicious.  (Also notice, Ava is still in her jammies.)

    Historically, soup has never been a homerun in my house.  On monday, Ava took one noisy slurp, looked over at me and said, "Nummy!"  She then proceeded to keep slurping and I jumped up and grabbed the camera.  This was a winner, I mean check out those lips!  And in my own words, "the homemade broth really makes it shine."


I think we are in the clear now, but I'm crossing my fingers just in case!
