Beef empanadas

  A month or so back, the kids helped me make dough and assemble empanadas.  I saw this recipe and wanted to try my hand at them.  I like keeping them in the freezer for the late night or afternoon snack when I am craving something different than a bowl of cereal or hummus.  I have been reaping the benefits this week and eating them for lunch.

    Ava kept herself busy with the dough as if she was playing with play-doh.  This was helpful in the sense that it was not destroying and/or disrupting our process.

     Joel took his job seriously and actually helped make each dough round by cutting them all out.













  They are good.  At first, I was a little disappointed with the crust.  I wanted it to be flakier, but it is not.  Once I got over that, I could enjoy them more and have grown to appreciate these little hand pies, especially on those days I need to eat in a pinch.

I followed the recipe here, but I omitted the peas and added extra spices.
In addition to the listed spices, I added these:
1/2 tsp. cumin
1/2 tsp. ancho chile powder
1/2 tsp. smoked paprika
