Cauliflower crust pizza

We make homemade pizza 1-2 times per month.  It always seems a bit more daunting than it actually is since we make the dough and sauce from scratch too.  However, the final result is always so surprisingly delicious.  For some reason we forget how good it is.  Anyway, for years I have been wanting to try the cauliflower crust that everyone raves about.  More than anything, I was intrigued.

I used this crust recipe and it turned out pretty good.  In terms of sneaking cauliflower into food (I have done some sneaking around here), this one is not the most sly.  However, I will certainly give it a pass in my book.  I thought it was very good for a whole crust made of mostly vegetable.

If I were to do it again, I would make it as thin as possible and definitely let it pre-bake for 20 minutes to get the crispy edges and less wet interior.

If you are one that gets intrigued by a more vegetable packed comfort food like me, this is a must try!
