Fudgsicles

  We made some fudgsicles the other day thanks to inspiration from this blog.  I used the recipe as a guideline, but like always, I played with it quite a bit.  The problem with doing that is I don't always remember what I did.  :/  I'm pretty sure this is what I did.
 
Lindsay's fudgsicles
1/4 cup chocolate
1/2 cup sugar
2 Tbsp. cornstarch
3 Tbs. cocoa powder
1/2 cup 2% milk
1 cup whole fat coconut milk
1/2 tsp. sea salt
1 tsp. vanilla
1 Tbls. butter
 
  In a pot over low heat, melt chocolate and mix in sugar, cornstarch, and cocoa powder.  Stir constantly.  It will be crumbly at this point.  Gradually whisk in milks until combined.  One can of whole fat coconut milk instead of adding regular milk would probably work well here too.  I was nervous it was going to be too coconutty for one of my coconut hating family members, but it was not at all!  Once combined, turn heat up and continue to stir constantly until it thickens, about 5 minutes.  It will still seem thin, but it should be thicker than water.  Once it has thickened, stir in salt, vanilla, and butter.  Let it cool and pour into molds.  We have fancy popsicle molds, but you could pour it into anything, cover with foil and stick a fork in it.  I don't know how long it takes for them to set, but the recipe said a few hours and it was not enough.  If you could have only seen the disappointment on these children's faces that first night when I said they wouldn't be ready.  They sure were worth the wait though, they were delicious!!
